AZ-104 is the certification employers ask for. AZ-900 is not, and if you already work in IT you can usually read the AZ-900 material over a weekend instead of spending a day in class.
The reason to sit AZ-900 anyway is if your background is on-prem and the cloud vocabulary is genuinely new. Coming in cold, AZ-104 moves fast enough to lose you in the first afternoon.
AZ-800 comes after, and only if you are running hybrid identity or Windows Server workloads in Azure. Plenty of Azure admins never need it.
